Paneer Butter Masala Recipe: A Rich and Creamy Delight

 


Paneer Butter Masala is one of the most popular Indian dishes, known for its creamy texture and rich, flavorful sauce. Whether you're a novice or an experienced cook, this easy-to-follow recipe will help you make a restaurant-quality dish right in your kitchen.

Ingredients:

  • Paneer : 250 grams, cubed

  • Butter: 2 tablespoons

  • Oil: 1 tablespoon

  • Onion: 2 medium, finely chopped

  • Tomatoes: 3 large, pureed

  • Ginger-Garlic Paste: 1 tablespoon

  • Green Chilies: 2, slit

  • Cashew Nuts: 10-12, soaked and ground into a paste

  • Cream: 1/4 cup

  • Milk: 1/2 cup

  • Kasuri Methi (Dried Fenugreek Leaves): 1 teaspoon

  • Garam Masala: 1 teaspoon

  • Red Chili Powder: 1 teaspoon

  • Turmeric Powder: 1/2 teaspoon

  • Coriander Powder: 1 teaspoon

  • Salt: To taste

  • Sugar: 1 teaspoon

  • Coriander Leaves: For garnish

Instructions:

Step 1: Preparing the Paneer

  1. Cube the Paneer: Cut the paneer into bite-sized cubes. If the paneer is store-bought and hard, soak it in warm water for 10 minutes to soften.

  2. Optional Frying: Lightly fry the paneer cubes in a tablespoon of oil until golden. This step adds a slight crust to the paneer but is optional.

Step 2: Making the Sauce

  1. Heat Butter and Oil: In a pan, heat 2 tablespoons of butter and 1 tablespoon of oil on medium heat.

  2. Sauté Onions: Add finely chopped onions and sauté until they turn golden brown.

  3. Add Ginger-Garlic Paste: Stir in the ginger-garlic paste and cook until the raw smell disappears.

  4. Cook the Tomatoes: Add the tomato puree and cook until the oil separates from the mixture. This may take about 10-12 minutes.

  5. Spice it Up: Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for another 2-3 minutes.

Step 3: Blending Flavors

  1. Cashew Paste: Stir in the cashew paste and cook for another 5 minutes. This adds a rich creaminess to the sauce.

  2. Add Milk and Sugar: Pour in the milk and a teaspoon of sugar. Let it simmer on low heat for about 5 minutes, stirring occasionally.

  3. Finish with Cream: Add the cream and mix gently to combine.

Step 4: Cooking the Paneer

  1. Add Paneer: Gently add the paneer cubes to the sauce. Stir carefully to coat the paneer with the sauce without breaking it.

  2. Season with Kasuri Methi and Garam Masala: Crush the Kasuri Methi between your palms and add it to the pan. Sprinkle garam masala on top and give it a final mix.

  3. Simmer: Let the curry simmer for another 5 minutes on low heat.

Step 5: Garnish and Serve

  1. Garnish: Turn off the heat and garnish with fresh coriander leaves.

  2. Serve Hot: Serve Paneer Butter Masala hot with naan, roti, or rice.
